Chicken Kabob and Hummus Pita
As promised monthly, below is September’s healthy and timeless meal creation!
|1-10 oz container of your favorite hummus||$2.49|
|1.5-2# boneless, skinless chicken breasts||$7.49|
|1/2 C of balsamic vinegar||$1.19|
|1 package of whole wheat flatbread or pita bread||$1.99|
|3 fresh yellow, red, or green bell peppers||$2.59|
|1 small bunch of parsley||$0.99|
|1 large red onion||$0.69|

|2 medium green zucchini||$1.59|

Wash, core, and cut peppers into large slices. Peel and slice large chunks of onion. Wash zucchini and slice into long thin slices for grilling. Cut lemon into quarter slices and finely chop fresh parsley.
Soak skewers in water (wooden skewers only) to avoid burning when grilling. Cut chicken into 2 inch cubes and toss in a mixing bowl with balsamic vinegar and salt and pepper. Once tossed well, prepare chicken on skewers with about 4-6 pieces on each.
Preheat grill to medium-high. Grill vegetables evenly on all sides. Set vegetables aside and cover with foil to keep warm.
Grill chicken skewers evenly on each side turning every 3-4 minutes.
Grill flatbread for one minute on each side.
Place flatbread on plate, smear about 1.5-2 oz of humus on flatbread and top with vegetables and a chicken kabob. Garnish lemon juice and parsley. Add salt and pepper if desired. ENJOY!
