Chicken Skewers with Peanut Sauce & Sautéed Mixed Veggies

Soak skewers in water prior to grilling (only if using wooden skewers). In a large mixing bowl mix together the marinade (3 tbsp. soy sauce, 2 limes juiced, 1 tbsp. of honey, 1 tbsp. srirachi, 2 tsp. ground ginger, 2 minced cloves of garlic). Add the chicken strips and toss to coat. *You can put the chicken strips on skewers right away or marinate for 2+ hours or even over night for better results.
In a small sauce pan on the stove, make the peanut dipping sauce. Mix together the peanut butter, 1 tbsp. honey, 2 tbsp. soy sauce, 2 tsp. srirachi, 2 tsp. ground ginger, 2 cloves of minced garlic, and the juice of one lime. Bring pot to a simmer over medium heat, let cook, stirring often until sauce is smooth and has thickened (about 8-10 minutes). Meanwhile heat the extra virgin olive oil over medium heat. Sauté onions for 3 minutes until soft. Add broccoli and cauliflower and cook for another 6 minutes until soft.
