Moroccan Chicken with Brown Rice & Sautéed Spinach
|4 Boneless Skinless Chicken Breasts||$6.99|
|¼ C Extra Virgin Olive Oil||$0.89|
|3 garlic cloves (minced)||$0.29|
|2 Tsp. Paprika||$0.49|
|1 Tsp. Cumin||$0.99|
|½ Tsp. Coriander||$0.99|
|¼ Tsp. Ground Ginger||$0.39|
|¼ Tsp. Tumeric||$0.99|
|¼ Tsp. Cinnamon||$0.39|
|1/8 Tsp. Cayenne Pepper||$0.49|
|1 Bag Fresh Baby Spinach||$2.99|
|1 C uncooked Brown Rice||$1.19|
|Total Cost for Dinner- Serves 4||$17.08|
In a large measuring cup, mix olive oil, minced garlic, and all spices together.
Put chicken breasts in a large zip lock bag and add ingredients in measuring cup to the bag. Marinate the Chicken for 10 minutes in the bag.
Use a NON STICK sauté pan over medium heat, add the marinated chicken to the pan. Cook chicken for about 2-3 minutes on one side, cover and continue to cook for another 3 minutes. Carefully remove lid and flip chicken. Once again, cook chicken for 2-3 minutes before covering and cooking for an additional 3 minutes. Depending on thickness of chicken breasts, you may need to add a few minutes to your total cook time.
Mean while sauté some extra minced garlic with the spinach in a nonstick pan over medium heat until wilted, sprinkle with salt and pepper.
While chicken continues to cook, prepare 1 cup of uncooked brown rice as directed on rice box/package! Serve Chicken, spinach and rice as a complete meal. ENJOY!
