Pesto Turkey Burgers with Roasted Lemon Potatoes and Asparagus
As promised monthly, below is February’s healthy and timeless meal creation!

Preheat oven to 400 degrees. Cut potatoes in quarters, drizzle with salt, pepper, and olive oil and toss to coat on half of a large baking sheet. On the other side of the baking sheet, toss the asparagus with olive oil, salt, and pepper and place the baking sheet in the oven for 20 minutes. After 10 minutes, toss the potatoes and asparagus and place back in the oven for another 10 minutes.
Create the burgers by taking the ground turkey and pesto and mixing it in a bowl with one hand. Form 4 patties with the mixture and sprinkle salt and pepper on both sides. Heat a non-stick skillet over medium heat and place the burgers in the pan once it’s hot. Flip burgers after 3-4 minutes and cook for an additional 3-4 minutes on the opposite side. Sprinkle mozzarella cheese on top and cover with a lid to allow the cheese to melt.
Meanwhile, zest the lemon and squeeze the juice into a large bowl. Once potatoes are done roasting in the oven, add potatoes to the bowl and toss the lemon juice and zest to coat. Add additional salt and pepper if desired.
Serve the pesto turkey burger with tomato slices on top and asparagus and potatoes on the side. Enjoy!
