As promised monthly, below is October’s healthy and timeless meal creation!

Potato Leek Soup & Salad

 

 

 

 

SOUP:

SALAD:

1 lb. gold potatoes (cut into wedges) $0.99

2 tbsp. white wine vinegar $0.19
½ tsp dijon mustard $0.19
6 cups of baby arugula (4 oz) $2.99

Cooking Instructions:

For SOUP:

In a large pot over medium, heat olive oil. Add leeks and cook until softened, about 10 minutes. Add broth, potatoes, thyme, salt, and bring to a boil.

Reduce heat to medium low and simmer, partially covered, until potatoes are extremely tender (about 15—20 minutes). Discard thyme sprigs, and puree potatoes with either an emulsion blender or regular blender. To serve, sprinkle with chives and add a dollop of yogurt.

Cooking Instructions:

For SALAD:

Preheat Oven to 375 degrees. Toss leek with 1 tsp. of olive oil and arrange on half of a baking sheet. Toss potatoes with 2 tsp. of olive oil and a pinch of salt and arrange on the other half of the baking sheet. Roast until leeks are caramelized and potatoes are tender, about 20 minutes. Cool briefly.arugula

To make dressing, puree caramelized leeks with vinegar, mustard, and remaining ¼ cup of olive oil. Season to taste with salt and pepper. Coat potatoes with 1 tbsp. of the dressing and toss arugula and radicchio with remaining dressing.

To serve, divide potatoes among serving plates, arranging in a circle on each, and top with greens!
