Salmon with Roasted Asparagus and Sweet Potatoes
As promised monthly, below is December’s healthy and timeless meal creation!

Preheat oven to 400 degrees. Cut 4 sheets of aluminum foil about 14-inches long. Divide asparagus into 4 equal portions and layer in center of each length of foil. In a small bowl stir together oil and garlic, then drizzle half of it over the 4 sets of asparagus. Sprinkle with salt and pepper.
Meanwhile wrap two sweet potatoes in foil and create fork marks in the top to allow the potatoes to breathe. Stick them in the oven for about 30 minutes or until a knife can be easily inserted into the potato.
Rinse salmon and allow water to drain off, then season bottom of each fillet with salt and pepper. Layer salmon on top of asparagus. Drizzle top of each salmon with remaining olive oil garlic mixture and season the top of the fillets with salt and pepper. Top each with about 2 sprigs of dill and 2 lemon slices. Wrap sides of foil inward over the salmon then fold in top and bottom of foil to enclose.
Place foil pouches in a single layer on a baking sheet. Bake in preheated oven until salmon is cooked through about 25-30 minutes. Unwrap and serve warm with half of a baked sweet potato. ENJOY!
