|1 tbsp garlic (minced)||$0.19|
|1 cup of uncooked rice (any kind you choose)||$1.99|

|1/4 cup of your favorite peanut sauce||$1.99|

Start by cooking your rice of choice per the directions on box or container. Meanwhile heat a nonstick skillet over medium heat. Add the olive oil and sauce the garlic and onions.
Once the garlic and onions are fragrant, add the roasted red peppers and cook for 2-3 minutes longer. Add shrimp to pan, lower heat and cover for about 3 minutes.
After 3 minutes, turn shrimp over and cook for another 2-3 minutes until shrimp are cooked (have turned pink). Keep lid off so you can see the color of the shrimp and you avoid over cooking.
Add peanut sauce to pain and mix all ingredients together well. Turn heat off and let rest for 1-2 minutes before serving.
Serve ingredients in sauté pan over cooked rice and top with sliced avocado and peanuts. Enjoy!
