As promised monthly, below is May’s healthy and timeless meal creation!

Vegetable Frittata

1 Tbsp. Coconut Oil $0.99
4 cups of Fresh Veggies (ie: Kale, Zucchini, Squash, Spinach, Mushrooms, and or Broccoli) $7.50
1 yellow onion (diced) $0.89
1 red or green pepper (diced) $0.99
1 Tsp. Minced Garlic $0.39
1 Large Potato diced (either pre baked or microwave until soft) $0.59
1/3 C. Fresh Chopped Herbs (ie: Parsley, Chives, Rosemary, Thyme, and or Basil) $1.99
1 Tsp. Salt & Pepper $0.39
Total Cost for Dinner- Serves 4 $15.22

Cooking Instructions:

Use a sauté pan that is oven safe and over medium-high heat, heat the coconut oil until hot. Sauté the veggies, onion, potatoes, and garlic until soft and fragrant.

In a separate bowl, whisk the eggs together with the chopped herbs and sprinkle with salt and pepper. Pour the egg mixture over the veggies in the sauté pan. Transfer the pan to a 350 degree oven. Bake frittata for about 20 minutes (you will know for sure when it is done based on when the eggs “set” in the middle of the pan or when a knife comes out clean from the center.)

Remove pan from oven once cooked. Slice and serve warm. ENJOY! Store leftovers in refrigerator. Accompanied well with caprese salad drizzled with balsamic vinegar. YUM!
