Honey Glazed Chicken Kabobs
|2/3 cup of reduced sodium soy sauce||$0.79|
|2/3 cup of honey||$0.99|
|1/2 cup of extra virgin olive oil||$0.59|
|2 tbsp. steak or chicken seasoning||$0.39|
|2 cloves of garlic (minced)||$0.39|
|2 pounds of boneless skinless chicken breasts (cut into 1 inch cubes)||$5.98|
|1 red pepper (cut into 1 inch chunks)||$0.99|
|1 green pepper (cut into 1 inch chunks)||$0.59|
|1 red onion (cut into 1 inch wedges)||$0.99|
|1 cup of brown rice (cooked)||$0.79|
|1 head of broccoli, cleaned and steamed or roasted)||$0.99|

Combine the soy sauce, honey, olive oil, seasoning, and garlic and mix in a bowl. Soak chicken in 3/4 of the marinade, leaving the leftover marinade aside. For a more flavorful recipe, feel free to soak chicken for a few hours or even overnight, but depending on time, you can prepare and cook right away.
Drain and discard the marinade. On metal or shaken wooden skewers, assemble chicken and veggies in which ever pattern you would like. Grill kabobs over medium heat for about 5-7 minutes on each side or until the juices of the chicken run clear. Use extra marinade on the side to brush kabobs while grilling for additional flavor.
Serve with brown rice and either roasted or steamed broccoli. ENJOY!
