As promised monthly below is June’s healthy and timeless meal creation!
Avocado Lime Shrimp Salad
|1 # medium shrimp, peeled and deveined||$8.99|
|1 1/2 tsp. ground cumin||$0.39|
|1/2 tsp. garlic powder||$0.39|
|1 tsp. smoked paprika||$0.39|
|1 large head of romaine lettuce, chopped||$0.99|
|1 pint cherry tomatoes, sliced in half||$1.99|
|1/2 small red onion, finely sliced||$0.59|
|1/2 cup corn kernels||$0.59|
|1 cup of black beans, rinsed and drained||$0.99|
|1 ripe avocado, diced||$0.99|
|extra virgin olive oil||$0.00|
|salt and pepper to taste||$0.00|

Prepare above listed ingredients as directed.
Preheat large skillet over medium heat. Once heated, add the olive oil and sauté shrimp. Sprinkle the shrimp with the above listed seasonings and continue to cook about 2-3 minutes or until pink.
Remove from the heat and in a large serving bowl begin to prepare the salad. Arrange the lettuce, tomatoes, black beans, corn, onion, avocado, and shrimp
Drizzle the salad with the olive oil and fresh squeezed lime juice. Add salt and pepper to taste.
Optional: sprinkle salad with fresh jalapeño and or crumbled cajota cheese for additional flavor.
Serve immediately and ENJOY!
