Chicken Lettuce Wraps
As promised monthly, below is April’s healthy and timeless meal creation!

|3 tsp. sriracha||$0.49|
|1 large carrot (peeled and sliced into tiny strips)||$0.49|
|2 scallions (sliced – green and white parts)||$0.49|
|1/4 oz. cilantro (chopped)||$0.89|
|1 oz. hoisin sauce||$0.99|
|1/2 tsp. dried ginger spice||$0.59|

Heat olive oil in a large sauté pan or skillet over medium heat. Add the ground chicken and cook, breaking up with a spatula until there are no longer any pink parts remaining. (This should take about 8 minutes).
Meanwhile, prep the vegetables and other ingredients. Slice the scallions separating the white from the green parts and set aside. Separate the leaves of the iceberg lettuce very carefully and place on a plate. Pick the cilantro off the stems and chop. Carefully peel and slice the carrot into very thin strips.
Once meat is cooked through, add the hoisin sauce, sriracha, white portions of scallions, and ginger to the pan with the chicken. Mix well. Stir every few minutes and cook for an additional 4-5 minutes.
Assemble your lettuce wraps. Place a spoonful of the ground chicken onto the lettuce leaf, top with carrots and a pinch of the leftover green portions of the scallions and the cilantro. Serve with brown rice on the side if desired. ENJOY!
