Chicken Piccata Stir Fry with Sautéed Spinach

Cooking Instructions:

In a medium bowl, combine the chicken, 2 tbsp. sherry vinegar, 2 tsp. flour, 1/2 tsp. salt and 1/2 tsp. pepper. In a separate bowl, combine the broth, soy sauce, and remaining sherry vinegar and flour.

Heat a large sauté pan over medium high heat and swirl in 3 tsp. of the olive oil. Add shallot and garlic, sauté for about 30 seconds to a minute until fragrant. Push shallot mixture to the side and add the chicken; arrange in a single layer so it cooks evenly on one side. After 2 minutes of the chicken searing, flip and stir-fry for another 2 minutes on the other side until no longer pink.

sauteed spinachAdd in 1 tsp. olive oil, green beans, and capers and sprinkle with remaining salt and pepper. Continue to stir fry for about 2 minutes. Add in broth mixture and stir-fry for an additional 2 minutes until chicken is cooked through and sauce has slightly thickened.

In an additional sauté pan, add in the remaining 2 tsp. of olive oil, once hot, add in baby spinach and sauté for about 3-4 minutes until wilted.

Serve chicken piccata with spinach on the side, garnish with fresh parsley and serve with a lemon wedge. ENJOY!
