As promised monthly below is February’s healthy and timeless meal creation. (*this time we changed it up and went with a fun dessert option!)
Chocolate Zucchini Black Bean Brownies
|1 – 15 oz. can of black beans, rinsed and drained||$0.59|
|2 tbsp. coconut oil||$0.29|
|1/2 cup unsweetened cocoa powder||$0.79|
|1/2 tsp. baking powder||$0.19|
|1 tsp. vanilla extract||$0.19|
|1/2 cup brown sugar||$0.29|
|1/2 cup semi-sweet chocolate chips (or mini chocolate chips)||$0.99|
|1 cup zucchini, grated and patted dry||$0.99|

This is a moist, chocolaty, rich, gluten free brownie filled with chocolate chips and zucchini, and I promise you cannot taste the zucchini or black beans! ENJOY!
Preheat oven to 350 degrees F. Spray an 8 x 8 brownie pan with cooking spray and set aside. In a food processor or blender add all the ingredients, except for the chocolate chips and zucchini. Process mixture until smooth.
Fold in chocolate chips and zucchini. Pour the batter into prepared pan and bake for 30-35 minutes, insert a toothpick, if it comes out clean, brownies are done. Leave brownies in pan to cool before cutting. ENJOY with your special someone!
