Curried Crab Cakes with Sweet Potato Fries
As promised monthly, below is May’s healthy and timeless meal creation!

|1 sweet potato||$0.89|

Preheat oven to 375 degrees. Slice the sweet potato into small strips (the shape of French fries). Arrange on a sheet pan and drizzle with 2 tbsp. of extra virgin olive oil. Sprinkle garlic powder, paprika, and salt and pepper to taste. Mix well and put them in the oven for about 20 minutes. Flip half way through.
In a mixing bowl add the lump crab meat and the ½ can of corn – rinsed and drained. Combine the breadcrumbs, egg mayonnaise, chives, mustard, curry powder, and pepper. Mix well, and shape into 4 patties.
Preheat a nonstick pan over medium heat. Add 1 tablespoon of extra virgin olive oil and coat the pan. Add the patties 2 at a time so that the pan is not crowded. Cook for 2-3 minutes per side until golden brown.
Meanwhile, peel and slice the cucumber. Slice the tomatoes and add them to a bowl with the cucumbers. Drizzle 1 tbsp. extra virgin olive oil, the apple cider vinegar, and salt and pepper to taste. Mix well.
Serve crab patties with sweet potato fries and a side salad! Don’t forget to ENJOY every bite!
