Easy Parchment Paper Scallops with Green Beans and Fennel

|1 bulb of fennel, cored and thinly sliced||$1.99|

Begin by preheating your oven to 400 degrees. Get 8 sheets of parchment paper ready and arrange 4 of the sheets on 2 medium sized sheet pans. Toss the tomatoes, cannellini beans, fennel, parsley, green beans, olive oil, and salt and pepper together in a large bowl.
Evenly divide the bean mixture into the center of each parchment paper square, top with scallops, and cover with another square of parchment paper. Fold the edges over multiple times to create a seal.
Bake the pouches for 15 minutes and then transfer to dinner plates. Carefully slice a slit in the top of each pouch to allow steam to escape. ENJOY!
