Egg Roll In a Bowl

2 tbsp. sesame oil$0.39
1 bunch of scallions (diced – separate white and green parts)$0.99
1/2 red onion (diced)$0.59

1 lb. ground chicken$4.99
1 tbsp. fresh grated ginger$0.39
1 – 8 oz. can of diced water chestnuts$1.19
2 tbsp. sriracha or hot sauce $0.19
14 oz. bag of coleslaw$1.99
3 tbsp. soy sauce$0.19
1 tbsp. rice wine vinegar$0.19

Cooking Instructions:

Heat a large skillet over medium/high heat with sesame oil in pan. Add white parts of scallions, red onion, and garlic. Sauté and stir frequently for about 5 minutes.

Add ground chicken, grated ginger, and water chestnuts. Add 1 tbsp. of sriracha to season and cook until meat is browned and broken up – about 8 minutes.

Add coleslaw mix, soy sauce, rice wine vinegar, salt and pepper and combine until mixed thoroughly. Continue to cook and stir often for about 5 additional minutes.

Scoop “egg roll in a bowl” into bowls and drizzle with remaining tbsp. sriracha (optional). Garnish with green parts of scallions and black sesame seeds (optional). ENJOY!
