As promised monthly below is December’s healthy and timeless meal creation!

NY Strip Steak with Roasted Broccoli and Sweet Potato Pancakes

2 large sweet potatoes (spiralized)$0.99
1 head of broccoli (chopped into pieces)$0.99
1 egg (scrambled) $0.29

2 scallions (sliced both green and white parts)$0.79

Cooking Instructions:

Preheat oven to 350 degrees.

Place lemon juice, rosemary, and 2 tablespoons of the olive oil in a bowl. Rub 4 of the 6 cloves of chopped garlic over the steaks and place steaks in bowl allowing juices to gather on each of the sides. Let steaks soak for about 5 minutes and then remove from marinade and discard the remaining marinade. Sprinkle salt and pepper on both sides of the steaks and set aside.

ny strip steakHeat a large cast iron skillet over medium-high heat and add 2 tablespoons of olive oil. Once oil is hot, add the steaks and cook for about 2-3 minutes per side or until desired doneness.

Place steaks on a cutting board and cover with a foil tent and allow them to rest for about 5 minutes.

Take the broccoli and spread out on a sheet pan. Toss with 2 tablespoons of olive oil, sprinkle with remaining 2 cloves of garlic and dust with salt and pepper. Roast in the oven for about 15-20 minutes, tossing half way through.

Meanwhile spiralize the potatoes and add to a bowl. Add tablespoons of flour, 1 scrambled egg and the sliced scallions. Form into patties and pan fry them with the remaining 2 tablespoons of oil in the same skillet used for the steak. Make sure the oil is hot before adding patties to pan. Each patty should take about 2-3 minutes on each side. Sprinkle with salt and pepper to finish and let sit on a paper towel lined plate to soak up any excess oil.

Slice steak against the grain into strips and serve in a bowl along side the sweet potato pancake and roasted broccoli. Serve sweet potato pancake with a dollop of sour cream (optional). ENJOY!
