Chicken, Quinoa, & Kale Bowls

Cooking Instructions:

kale2Rinse quinoa really well before using. Add rinsed quinoa to 5 ¼ Cups of water and bring to a boil. Once quinoa is brought to a boil, reduce temperature to low and simmer for 10 minutes or until quinoa is cooked. While waiting for quinoa to cook; clean, wash, and chop kale into small pieces. Heat 1 Tbsp. of coconut oil and minced garlic in a pan, add kale and sauté until cooked and wilted. In a separate sauté pan, heat the other 1 Tbsp. of coconut oil and sauté chicken cubes until cooked (about 4 minutes on each side). Season with salt and pepper on both sides. Dump quinoa, kale, and cooked chicken into a bowl with a dash of salt and pepper and stir well.

ENJOY hot or cold. Store in refrigerator or freezer.
