Spring Chicken Soup with Veggies & Quinoa
|4 C low-sodium chicken broth||$1.99|
|3 stalks of celery (chopped)||$0.39|
|1 C carrots (sliced matchstick style)||$0.99|
|1/2 C uncooked quinoa||$0.79|
|1/2 C sugar snap peas||$0.99|
|1 1/2 C shredded chicken||$3.99|
|4 tbsp. fresh dill (chopped)||$0.99|
|Salt and Pepper to Taste||–|
|Total Cost for Meal||$10.62|
Bring the chicken broth to a boil in a small saucepan over high heat. Add the celery and carrots and cook for 3 minutes.
Add the uncooked quinoa; cover and simmer over medium-low heat for about 10 minutes.
Add the sugar snap peas and shredded chicken breast to the soup and cover and simmer until vegetables and quinoa are tender for an additional 5 minutes.
Remove from the heat, stir in the dill and season with salt and pepper to taste.
Add a squeeze of lemon for an additional fresh taste and ENJOY!
