Stuffed Portobello Mushrooms with Farro

Cooking Instructions:

Content Preheat oven to 350 degrees. mushroomPrep mushrooms by wiping them with a damp paper towel to free them of any dirt. Turn them on their top side and scoop out the inside stem to make them hollow but keep them sturdy.

Heat a large non-stick skillet over medium heat. Add 2 tbsp of extra virgin olive oil and salt chopped onion and garlic for 3-4 minutes until translucent. Add ground beef and sauté until no more pink is present. Add can of rotel tomatoes, salt, pepper, spinach or arugula, mozzarella cheese, and adobo sauce. Stir ingredients all together and cook for 2 minutes longer.

Fill mushroom caps generously with stuffing. Top with grated parmesan cheese (optional).

Place on a non-stick pan lined with parchment paper. Cook for 15-20 minutes. Serve with 1/4 C of cooked faro and ENJOY! goes herefarro
