|12 Oz of Ground Turkey||$6.29|
|1/2 Cup of Parmesan Cheese||$1.89|
|1 Tbsp. Lemon Zest||$0.59|
|1/2 Tsp. Parsley||$1.29|

|Total Cost for Dinner- Serves 4||$18.21|
Peel and half the zucchini lengthwise. Scoop out the seeded flesh in the middle and mix with the 2 cups of cooked brown rice. Meanwhile, slightly brown the ground turkey in a sauté pan on the stove, once brown (about half way cooked), add to seeded brown rice mixture and stir. Add parmesan cheese, egg, lemon zest, and seasonings. Spoon the mixture into the hollowed out zucchini halves and bake in a baking dish at 375 degrees for 30 minutes. Top with more parmesan cheese and parsley and drizzle with extra virgin olive oil.
